The Best Watermelon Salad For The 4th Of July
HAPPY 4th of July!!!! If you’re not Susie Homemaker and you STILL have no idea what you’re bringing as an appetizer for today’s cookout, JOIN THE PARTY!!! Literally! But luckily, I have an idea for you to try!! It’s super yummy and fits all of my very elite and prestigious requirements for my go-to dishes: quick, easy and unique. LOL. It’s a different twist on a watermelon salad with watermelon, blueberries, feta cheese, mint, and balsamic. It looks festive and tastes gourmet with the balsamic and feta cheese surprise. Here's how to make it! Like I said, it's super easy.
What you’ll need:
1 - Whole Seedless Watermelon (5lb)
1- Package of cubed or crumbled Plain Feta Cheese (1/2 cup)
1 - Package of Mint Leaves (1/4 cup)
1-2 - Package(s) of Blueberries (1/2 pound)
1 - Balsamic Vinegar (I love Fig Balsamic if you can find it), the thicker the better!
1 - Large bowl for the salad
Directions:
Step 1: Cut watermelon in to bite size pieces and place in the bowl
Step 2: Wash and place blueberries into the bowl
Step 3: Prepare the mint to your liking with whole leaves, chopped or just torn up nicely works too and place in the bowl
Step 4: Add feta cheese, should be roughly a 1/2 of a cup
Step 5: Lightly toss the ingredients to mix them up, refrigerate until ready to serve
Step 6: Just before serving, drizzle the Balsamic Vinegar across the top of the salad
